This lot is produced together with CATUR Coffee Company, founded by Indonesian Barista Champion Mikael Jasin.
CATUR works closely with partner farmers to improve consistency and quality in Indonesian coffee. One of the biggest challenges in Indonesia has always been flavor stability from season to season. CATUR addresses this by combining careful cherry selection, controlled fermentation, and collaboration with microbiologists to guide fermentation more precisely.
Their goal is simple: elevate Indonesian coffee through better process, better collaboration, and long-term relationships.
The Terroir
The Terroir
This coffee comes from Pantan Cuaca Estate in the highlands of Aceh, Sumatra. Grown between 1500 and 1700 meters above sea level, the cooler climate slows down cherry development. That extra time on the tree allows more sugars to form, which translates to better sweetness and clarity in the cup.
The region’s volcanic soil and mountain climate give the coffee structure and gentle vibrancy, expressed here as red apple brightness, soft green tea notes, and a floral hibiscus finish.
