This coffee is a spice-driven comfort cup, something truly uncommon in most coffees. The first sip hits the nose before the tongue, carrying a bold cinnamon aroma that instantly recalls the warmth of a Christmas market. The flavor profile is intentionally simple yet captivating, dominated by cinnamon, cardamom and hints of cacao nibs, finishing with a gentle, rounded acidity as it cools.
The mouthfeel is smooth and comforting, never rough, and the aftertaste fades cleanly, inviting the next sip. It’s a cup made for colder days: bold, aromatic, and heartwarming. It really suits as flat white or cappuccino. Feels like getting ready for winter.
Behind the Name: Zimt Zalabim
The name Zimt Zalabim comes from a mix of languages and feelings. “Zimt” means cinnamon in German, the spice that defines this coffee’s flavor and aroma. “Zalabim” plays on sim salabim, that magical phrase whispered before something delightful appears.
Together, they capture the spirit of this coffee: simple, bold, and a little bit magical. Just like a warm cinnamon spell on a cold day, Zimt Zalabim turns every sip into a comforting moment of wonder.
Origin Story: Kang Irwan
Kang Irwan is one of West Java’s most forward-thinking farmers, known for mastering traditional processing. His name is often associated with the renowned Sunda Geisha, but his curiosity led him to experiment with infused coffees.
Beyond his own plots of arabica, Kang Irwan also supports surrounding farmers, sharing knowledge and ensuring they grow and process coffee together toward better quality. His approach blends science, collaboration, and a deep respect for tradition.
Two years ago, we proudly released his Typica NASD (Natural Anaerobic Slow Drying) coffee, which became one of our most highly praised coffees. Clean, complex, and elegant, it even found its way onto the German Brewers Cup stage, used by one of the competitors.
