Produced by Tuang Coffee, Café de Flores represents the essence of Flores Island coffee.

The late 2024 crop shows a subtle yet meaningful evolution from previous harvests. This year’s lot offers more clarity and definition, while preserving the warmth that makes Flores so distinctive.

In the cup, you’ll find nuanced notes of blueberry candy and dried fruit, lifted by an aroma of tropical spices. The spices linger gently in the aftertaste, accompanied by a slightly buttery finish. A silky mouthfeel ties everything together—indulgent, calm, and grounding.

It’s the kind of coffee that evokes the landscape it comes from: lush greenery, slow mornings, and the quiet beauty of Flores.

We once promised Andre, the head of Tuang Coffee, that we would visit Flores—not only for his coffee, but for the island itself. Until then, this release is our way of bringing Flores to you.

The process - Natural Anaerobic

In a natural anaerobic process, whole coffee cherries are fermented in a sealed, oxygen-free tank, then slowly dried with the fruit still intact. This method enhances fruit intensity, bringing out bold sweetness, vibrant aromatics, and a rich, layered flavor profile.

The Producer - Tuang Coffee

Tuang Coffee was founded in 2014 in Manggarai by Andre, a local processor who wanted to change how coffee was traded in his home region. Instead of waiting for harvest and paying uncertain prices, Tuang buys coffee upfront, before the season begins. This gives farmers the confidence and resources to invest in better farming and processing practices.

Beyond fair pricing, Tuang works closely with growers—building processing facilities, sharing knowledge, and improving post-harvest techniques. The goal is simple but powerful: better livelihoods for farmers, and better coffee in the cup. Café de Flores is the result of that long-term commitment—proof that when farmers are supported, quality naturally follows.

The Terroir - Flores Island

Flores sits about 320 kilometres east of Bali, shaped by a dramatic chain of active and dormant volcanoes. Coffee arrived here later than on other Indonesian islands, but the land quickly proved its potential. Volcanic soils rich in minerals, combined with high altitudes and cool mountain air, create ideal conditions for slow cherry development. The result is coffee with clarity, sweetness, and a distinctive tropical character that feels inseparable from the island itself.

Water: 270 ml

Water temperature: 93–95°C

Grind size: Medium

  • 1st pour: 50 ml — bloom 30 seconds
  • 2nd pour: 120 ml — wait until 1:00
  • 3rd pour: 100 ml — finish at ~2:00

ABout the coffee

Is the coffee freshly roasted?

Yes. We roast our coffee in small batches every week. After roasting, the beans are rested for at least one week before shipping. This allows them to reach optimal freshness and ensures they’re ready to brew when they arrive.

Why do the beans need to rest for one to two weeks after roasting?

After roasting, coffee beans naturally release carbon dioxide in a process called degassing. During this resting period, the flavors continue to develop and stabilize. If the beans are used too soon, the coffee may taste unbalanced and produce excessive gas during brewing, leading to suboptimal extraction. In addition, dialing in becomes inconsistent during this phase, making it more difficult to achieve stable and repeatable results.

When is the optimal time to consume our coffee?

Typically, our coffee performs at its peak between 2 weeks and 3 months after roasting, when the flavors are fully developed and stable.

What is the return policy?

Our goal is for every customer to be satisfied with their purchase. If something isn’t right, let us know and we’ll do our best to make it right.We offer a 30-day return policy. Items must be unused, in their original condition, and with püackaging.

Please note that coffee is a fresh product and cannot be returned once the seal opened.

When will I get my order?

We typically send the coffee every Tuesday and Friday.

Delivery usually takes 2–3 business days after shipping, depending on your location.

Where are your products made?

Our coffee is sourced directly from farmers and producers across Indonesia.

Roasting takes place in Haan, Germany, where we prepare each batch with a focus on quality, consistency, and freshness.
